I love making this dish because you get such a great mix of flavors together in one. As something that's really easy to create, it's the perfect weeknight meal.
This one's pretty simple so there isn't much to get into detail about but there are a few things to note....
About Gnocchi
Gnocchi is and should be a very tender pasta. The texture will vary a bit depending on where you decide to buy yours. If you can find the time to make your own or buy some freshly made that would be your best bet here. Of course, if you make it yourself it will significantly increase the amount of time needed to make this dinner but I promise, it'll be well worth it! With that being said, cook your pasta halfway through...you will want to leave some time for it so continue to cook in all the sauce that's created later on.
Making the sauce
If you like your sauce a little sweeter, add a tiny bit more BBQ sauce instead. Follow the opposite if you like more tang. I find that the recipe you see here provides the perfect ratio.
Once the pasta is cooked and the sauce is made, all that's left to do is combine the two and make the magic happen. Simmer the duo in the pan for a couple extra minutes so the gnocchi absorbs all of those luscious flavors then this meal is ready to be devoured.

Sloppy Joe Gnocchi is slightly different than your average Sloppy Joe recipe but really hearty and ready in under 30 minutes.
Ingredients
1 lb ground beef
1 package Gnocchi (17.6 oz)
¼ cup red bell pepper, chopped
¼ cup green bell pepper, chopped
¼ cup yellow bell pepper, chopped
1 cup onion, chopped
¾ cup honey bbq sauce
½ cup ketchup
½ teaspoon granulated garlic
½ teaspoon cinnamon
½ teaspoon ground ginger
¼ teaspoon smoked paprika
olive oil for the pan
salt and pepper to taste
Instructions
- Bring a pot of water to a boil. Salt water if desired and cook gnocchi halfway through (see cook time on packaging), drain and set aside. Add olive oil to a pan, cook onions until translucent, add all of the bell pepper and cook until vegetables are tender. Add ground beef, sauteeing until beef has browned. Add spices, ketchup, bbq sauce, salt, and pepper to the pan. Cook for an additional 2-3 minutes on low heat.
- Add gnocchi to the ground beef mixture, stirring to combine; cook for an additional 2 minutes on low heat or until gnocchi is ready to eat.
- Prep Time: 5 minutes
- Cook Time: 20 minutes
