These pecans are perfect as a snack or as an addition to so many things. They can be used on top of ice cream, cakes, inside of other desserts...you can really let your imagination run wild here!
Although these are so simple to make, the technique and specific order each step takes place should be noted.
About the egg white
For 8oz of pecans you'll only need one egg white, add in your vanilla extract and water once you're ready to whip it up. Be sure your mixer is affixed with a whisk attachment. Whip the eggs to stiff peaks form. When you reach stiff peaks there won't be any liquid at the bottom of your mixing bowl. If your mixture can slide about easily, it needs more time to whip. Additionally, the egg white will hold its form and won't collapse.
The process
Mix the dry ingredients together first. In a separate bowl; slowly fold the pecans into the egg white mixture. Be careful not to deflate the egg whites. Once you see the pecans are coated rather evenly, it's time for the sugar/cinnamon. Toss and gently fold again here until all ingredients have combined.
Baking candied pecans
It's important that you line a baking sheet with parchment paper. The pecans will be sticky so try your best to separate the larger chunks. Once inside the oven, you'll need to return about every 15 minutes to toss them; this ensures even baking time exists. It makes that crunchy finish!

Ingredients
8oz pecans, halved
¼ cup brown sugar
¼ cup white sugar
1 egg white
¼ teaspoon vanilla extract
½ teaspoon water
1 teaspoon cinnamon
pinch of salt
Instructions
- Preheat oven to 300 degrees. Combine dry ingredients and set aside. In a separate bowl, add egg white, water, and vanilla extract. Whip until stiff peaks form is reached. Add in pecans and toss to combine. Add dry ingredients, tossing again until pecans are evenly coated. Spread mixture out onto a baking sheet lined with parchment paper. Bake at 300 degrees for 45 minutes (remove from oven to toss every 15 minutes) Let cool and enjoy!
