Description
Gingerbread Cookie Bars with Cream Cheese Frosting are chewy and spiced with fresh ginger. The frosting takes them over the top!
Ingredients
1/4 cup light brown sugar
3/4 cup cane sugar
1/4 cup butter
1/3 cup molasses
2 cups flour
1 teaspoon freshly grated ginger
1 egg
1/2 teaspoon ground ginger
2 teaspoons ground cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon vanilla extract
2 teaspoons baking soda
1/2 teaspoon salt
For the frosting:
4 ounces cream cheese
1 tablespoon softened butter, salted
1 cup confectioners' sugar
Instructions

Start by preheating your oven to 350 °F and grease an 8 x 8 square baking pan with butter, then flour.

Using a stand mixer equipped with a paddle attachment beat the butter and both sugars together using an electric mixer on medium speed until light and fluffy. Add the egg, molasses, and vanilla extract and mix until combined.
- Add in the flour, salt, baking soda, grated ginger, ground ginger, cinnamon, and nutmeg. Gradually add this dry mixture to the wet ingredients in the large bowl and mix until everything is just combined.

For the frosting:
