Goat cheese is one of those cheeses that is multifaced nature. The slight tang this cheese has makes it a wonderful adornment for crackers, fruits, and a multitude of breads alike.

Adding cranberries would be a wonderful addition to the pistachio log as pistachios often pair well with a variety of tart fruits.

Mini Goat Cheese Logs are versatile

There are several different ways to eat goat cheese. You could enjoy these on a crudite platter...of course crackers and an assortment of vegetables would go well here but imagine chopping up the logs and tossing the pieces into a salad or spreading some on a bagel!

Enjoy these Mini Goat Cheese Logs!

Description

These logs are adorned with 2 different toppings made of a couple different ingredients. One is crunchy and mild while the other is bold and herbaceous. The possibilities really are endless here and if you like cranberries in your cheese I would add some chopped, dried, cranberries to the pistachio log.

Ingredients

Scale

2 goat cheese logs

2 tbsp green onions, sliced thin

2 tbsp dill, chopped

2 tbsp pistachio nuts, chopped

2 tbsp panko breadcrumbs, toasted

Instructions

  1. Chop pistachios and add to toasted breadcrumbs.
  2. Chop green onions and dill, toss together.
  3. Roll goat cheese in both mixtures.

Serve and Enjoy!

Notes

Choose your accompaniments, I chose rainbow carrots, English cucumbers and water crackers.
