Description

Homemade Coconut Granola is a Trader Joe's copycat recipe that is super fresh, has a long shelf life, and is extremely versatile. 


Ingredients

Scale

1 cup oats

1/2 cup sliced almonds

3 cups corn flakes

1/2 cup coconut oil

1/2 cup maple syrup

2/3 cup toasted coconut

2 tablespoons quinoa

1/2 teaspoon salt

1 teaspoon vanilla extract


Instructions

  1. Preheat the oven to 350 degrees.
  2. Gather all ingredients and pre-measure them. 
  3. Combine all ingredients in a large mixing bowl and stir to combine completely.
  4. Spread the granola in an even layer onto a 9 x 13-inch pan lined with parchment paper. 
  5. Bake the granola for 10-15 minutes. Halfway through baking, remove the pan and use a spatula to flip and mix the granola before returning it to the oven
  6. Let cool completely, store in an airtight container.
