Description
Fresh mozzarella cheese marinated in a few fresh herbs, olive oil, roasted tomatoes and garlic. Perfect as an appetizer or added ingredient.

1 ball of mozzarella cheese (8oz), sliced
1 tablespoon fresh basil, sliced
2 tablespoons sun-dried tomatoes, chopped
2-3 garlic cloves, grated
1 sprig fresh oregano, chopped
1/2 sprig fresh rosemary
1 small handful thyme, chopped
1/2 cup cherry tomatoes
4 tablespoons olive oil
assortment of crackers
Instructions
- Preheat oven to 425 degrees.
- Spread tomatoes on a baking sheet; pour two tablespoons of olive oil on top coating all sides. Sprinkle with salt and pepper. Roast tomatoes for 10 minutes, toss halfway through. Remove from oven, place into a bowl with remaining olive oil and grated garlic; cool completely
- Chop all herbs and grate garlic
- Combine cooled tomatoes with garlic, sun-dried tomatoes, and herbs in a bowl. Mix to combine
- Slice mozzarella cheese and place tomato mixture on top. Marinate in an airtight container for one hour. Serve with crackers.
