Description
Mediterranean Inspired Layer Dip is a fresh mix of hummus, whipped feta, and a cucumber tomato-herb salad.
Ingredients

For the cucumber-tomato salad
½ cup cucumber, chopped tiny
½ cup tomato, chopped tiny
juice from half a lemon
2 sprigs oregano, chopped
a small handful of fresh basil, chopped
2 sprigs of parsley, chopped
(optional) salt and pepper to taste
For the Hummus:
2 (10oz) packages store-bought hummus
2 garlic cloves, minced
1/4 teaspoon cumin
1/8 teaspoon pepper
2 tbsp olive oil
For the Whipped Feta:
1 (8oz) block Feta cheese
¾ cup Greek yogurt
(optional) 1 teaspoon water
Instructions
- Chop vegetables and herbs. Add them to a bowl, squeeze lemon and stir.
- Make Whipped Feta-add Feta cheese and yogurt to a food processor and blend until smooth, scraping down the sides of the bowl in between blending.
- Saute garlic with spices and olive oil in a pan for 30 seconds or until fragrant; let cool before stirring into hummus.
- Assemble dip-Add hummus to a dish, place whipped feta on top and swirl it in with a spoon. Top with cucumber tomato salad. Serve with pita crackers.
