Pimento Cheese Brioche Burgers

The first words that come to mind when I think of this burger are layers on layers on layers. Each flavor builds on the next and when all are combined, a truly wonderous eating experience takes place. With that being said: let's outline this post by layer:

Choosing the bread

I used brioche buns that I purchased from Publix. These buns are made fresh in their bakery. I love using this type of bread for any hearty sandwich, it can really hold its own.

About the veggies

Bibb lettuce was used because of its soft and earthy nature. I enjoy the delicate texture of Bibb on burgers because it's not overwhelming and allows the palette to focus on the other flavors in the sandwich! One thing I really enjoy is pickled red onions. They're so easy to make and the payoff is real!!! All I did was combine ½ cup water, ½ cup vinegar (apple cider works really well if you have it) 1 tsp sugar, 1 tsp sugar, a splash of lemon juice, and a half of a red onion in a container--stirred everything up and left it in the fridge overnight. The result is delicious!!!

A bit about the ground beef

I think this burger would be over the top if you have time to let the ground beef marinate a bit. I used ground chuck here with an 80/20 beef to fat ratio. The flavor's in the fat!!

Pimento Cheese takes it over the top

AS IF this burger couldn't stand on its own, adding pimento cheese takes it into another dimension. The chili powder and sriracha gives the cheese a nice little kick and the creaminess brings everything together.

Pimento Cheese Brioche Burger

Description

Pimento Cheese Brioche Burgers are juicy with homemade pimento cheese, pickled onions and a well-seasoned patty. 


Ingredients

Scale

For the Pickled onions:

½ cup water

½ cup apple cider vinegar

½ whole red onion, sliced

1 tsp sugar

½ tsp salt

dash of lemon juice

For the Pimento Cheese:

1 (8oz) package cream cheese

¼ cup diced pimentos

1 cup cheddar cheese, grated

1 tablespoon sriracha

¼ teaspoon chili powder

For the ground beef:

1 ½ lbs ground beef

¼ cup parsley, chopped

½ tsp onion powder

½ teaspoon smoked paprika

½ teaspoon granulated garlic

1 teaspoon salt

½ teaspoon pepper


Instructions

For the pickled onions:

  1. Combine liquids in an airtight container. Add salt and sugar, stir until both have dissolved. Add sliced red onion. Refrigerate overnight.

For the pimento cheese:

  1. Combine all ingredients in a bowl. Use a fork to work the ingredients through the cream cheese.

For the ground beef:

  1. Combine seasonings and parsley in a bowl with meat. Massage with hands until seasonings are sprinkled throughout. Divide the meat into fours. Roll each amount into a ball and flatten to form into patties. Cook until desired temperature is reached (this depends on how you like your burger).

Slice buns in half and coat with a little bit of butter, place buns cut side down on a griddle or pan to toast if you wish!
