Pistachio Cod in a White Wine Butter Sauce

This is one of the quickest and most delicious meals you can make in about 20 minutes. If you enjoy fish, this one's for you!

A few tidbits

Ready in a flash, this is one of the easiest dishes you can make...perfect for a weeknight meal. One of the things that works best to maximize your time is multitasking. Start with you couscous and while that's going, make everything else. You'll want to make sure you have your pistachios chopped beforehand as well and this can either be completed with a knife or food processor. The fish is done in about 5 minutes as it's super delicate and flaky. This dish did yield about 2 cups of couscous so follow the instructions on your packaging for the best cooking method. I used Sauvignon Blanc as my wine and any dry white will do the trick.

In the beginning

In a small saucepan, brown couscous in about a tablespoon of olive oil on medium heat. Please note that all couscous will not be the same color and this is okay (see video for further clarification). Add water, salt it, and cook according to instructions on the packaging.

About cod

It's a super delicate fish, so don't be astonished if yours falls apart; this is likely especially when using a sauce to cook the fish as mentioned in this recipe. If you'd like, you can give it a quick sear in olive oil before adding it to your reduced sauce.

The process

Start by adding half of the butter to a pan, add in the shallots and let those cook until tender. Once that is complete you'll want to add the pistachios, toast them for about 1 minute, and then pour in the white wine. On medium-low heat, let the sauce reduce down a bit before adding in the SEASONED fish. Turn the heat to medium-high for the final step. This is when you can let the fish cook entirely..for about 2 minutes on each side. Add in the remainder of the butter and stir to incorporate before plating your dish! Top with fresh chopped parsley.

You should have just enough sauce left over to spoon a bit on top of the couscous.

Description

Pistachio Cod in a White Wine Butter Sauce is one of the quickest and delicious meals you can make in about 20 minutes.


Ingredients

Scale

½ lb Cod

½ cup white wine

4 tablespoons salted butter

⅓ cup chopped pistachios

1 shallot, sliced

2 cups couscous, cooked

2 sprigs parsley, chopped

1 teaspoon smoked paprika

Salt and pepper to taste


Instructions

  1. Cook couscous according to instructions.  Season fish with smoked paprika, salt, and pepper on both sides. (Pulverize pistachios in a food processor if not already done so; alternatively, finely chop nuts with a sharp knife). Melt 2 tablespoons of butter in a pan over low-medium heat. Add shallots, cooking until tender. Add pistachios and cook for 1-2 minutes. Pour in white wine, reducing over low heat for about 5 minutes. Place cod fillets in sauce and simmer until cod has fully cooked on both sides. Add 2 more tablespoons of butter; melt until fully incorporated. Top with fresh chopped parsley. Spoon fish over warm, cooked couscous.

      I like that there are recipe conversion options to make more Servings. Can this be made with swordfish?
