Southwest Quesadillas

Description

Yummy quesadillas that are big on flavor!!


Ingredients

For the quesadillas

2 chicken breasts

4 slices white cheddar cheese

4 slices queso blanco

(alternatively, grate an even amount of each cheese)

4 raw tortillas

½ cup white onion, chopped

1 cup bell peppers, sliced

1/8 tsp seasoned salt

¼ tsp cumin

¼ tsp garlic powder

1 tbsp lemon juice (approx.)

sprinkle of pepper

 

For the dip

½ cup sour cream

¼ cup fresh avocado, mashed

Trader Joe’s Chili Lime Seasoning to taste


Instructions

  1. Season chicken with spices and cook three quarters of the way.
  2. Add peppers and onions, sauté until vegetables are tender and chicken is cooked through.
  3. Cut chicken and prepare mixture for quesadilla.
  4. If using raw tortillas, cook them first. Assemble quesadilla, place on griddle or pan. Press while cooking; feel free to use a clean, heavy dish or other kitchen item to place on top of quesadilla. Flip quesadilla, press, and cook until cheese has melted completely.

For the dip-add sour cream, mashed avocado (or guacamole) and season to taste.
