I love this fresh strawberry bread (with lemon glaze) because it's an easy quick bread recipe that is incredibly fruity and fragrant but also different. It's made with fresh strawberries, fresh basil, and a tart lemon glaze to balance out the sweetness. This is an easy recipe to make that's perfect for strawberry season.
Strawberry and basil isn’t necessarily a combination some would think to put together but it works so well! Juicy strawberries are the star of the show in this delicious sweet bread, I promise it won't last very long. In my opinion, those two ingredients specifically bring out the best flavors within each other. An added plus is that strawberry bread uses ingredients that are easily found in the grocery store.
Ingredients
Strawberries-the main ingredient in this quick bread
Fresh basil-creates a nice contrast and compliments the flavor of the strawberries
Vanilla almond milk creamer-adds moisture to the bread and extra flavor
Brown Sugar- keeps a bit more moisture in the bread as opposed to using white sugar alone
Granulated (white) sugar-gives the bread some sweetness
All-purpose flour-acts as the base of the bread
Baking soda and baking powder- act as leavening and help the bread rise
Large eggs-help hold everything together during the baking process
Butter- adds extra moisture and flavor
Salt- provides balance, enhancing and balancing the other flavors
Vanilla extract- gives the bread a slight vanilla flavor and adds to the vanilla almond milk creamer
Confectioners Sugar- used for the glaze, add a sweet element to counteract the tanginess of the lemon
Lemon Juice & Lemon zest- the counterpart to the confectioner's sugar, gives the glaze a little zing, the zest provides some texture and added flavor

As with many sweet breads, like banana bread, strawberry bread with lemon glaze comes together in a matter of minutes. This easy strawberry bread recipe comes together even quicker when you complete any prep work beforehand. Chop your strawberries, and herbs, and make the glaze beforehand. Additionally, a pro tip for making anything involved with eggs is to make sure you crack them in a separate bowl. This will allow you to remove any shells that may try to sneak their way in this essentially, ruining what you've created.

- Wire rack- optional cooling rack for the bread
How to make Strawberry Bread (with lemon glaze)
This recipe requires a few elements of prep work:
1. Allow enough time to let your butter reach room temperature.
2. Chop the strawberries into small pieces after removing the stems.
3. Prepare the loaf pan with a coating of butter and flour
4. Create a flour mixture; in a medium bowl, combine flour, salt, baking soda, and baking powder before setting aside.
After completing all prep work, the rest of the process is a breeze! Make sure your oven is preheated (to 375 degrees) and Be sure to give your loaf pan a coating of butter and flour so the bread doesn’t stick to the pan. Once your bread has finished baking, start by creaming together butter and sugar together with an electric mixer for 1-2 minutes until the mixture has become slightly more fluffy.
Next, go ahead with the wet ingredients; add eggs, one at a time, to a large mixing bowl. Mix the eggs for a few seconds before following up with the vanilla extract and creamer. You'll want to do this at a slow pace to avoid ingredients splashing out of the mixing bowl.
After, add in the dry ingredients slowly, about a cup at a time before mixing on low speed. The final step is to add the chopped strawberries to the batter and mix gently by hand so that the small pieces don't get pulverized by way of an electric mixer.
Transfer the batter to the prepared pan before baking in the oven at 375 degrees F for 50-55 minutes. Once your bread has finished baking, let the bread cool completely before glazing the top of the bread.
The end result will be tender, fluffy bread.
How to make the lemon glaze
This is a simple glaze that is comprised of just two ingredients: lemon juice and powdered sugar. In a small bowl, combine the lemon juice with the sugar and mix until smooth. If your sugar seems really clumpy in the bag, I would recommend using a small sifter.
How to store Strawberry bread (with lemon glaze)
The perfect way to store this homemade strawberry bread (with lemon glaze) is by placing the cooled bread in an airtight container and keeping it at room temperature. If you're making this bread to take to go, let it cool completely before covering it tightly in parchment paper (if you have it), plastic wrap, then aluminum foil. This is a great way to ensure the moisture stays locked in while being transported.
Additionally, I have kept this bread in its original loaf pan after cooling and glazing and wrapped it tightly with plastic wrap.
I do not recommend freezing this bread because it is made with fresh fruit, enjoy it immediately!
Substitutions
Whole milk, oat milk, and almond milk can all be used as substitutions for vanilla almond milk creamer. None of the previously mentioned varieties will drastically change the flavor or texture of this particular bread.
Variations
*Do not use dried basil in place of fresh basil for this particular recipe. It has a completely different composition, potency, and texture and does not work well as a substitution here.
This bread would be great as muffins or even mini loaves.

Ingredients
For the bread:
1 cup plus ⅓ cup strawberries, cut into small pieces
4 tablespoons basil, chopped
1 ½ cups all-purpose flour
2 eggs
1 tsp baking powder
⅛ tsp baking soda
¼ tsp salt
½ cup white sugar
½ cup brown sugar
½ cup butter, room temperature
¼ cup vanilla almond milk creamer (or milk of choice)
½ tsp vanilla extract
For the glaze:
1 cup confectioners sugar
5 teaspoons lemon juice
2 teaspoon lemon zest
Instructions
1. Using the paddle attachment on an electric mixer, cream together butter and sugar in an electric mixer at medium speed.
2. Slowly add eggs, one at a time, mixing at a low speed.
3. Carefully add in creamer and vanilla extract, and continue to mix at a low speed.
4. Add in the dry ingredients, very slowly so that it doesn't blow out of the bowl; this includes the flour, salt, baking powder, and baking soda.
5. Add the basil and strawberries; mix in gently by hand with a rubber spatula.
6. Add this mixture to a bread pan that's already been coated with flour and butter to prevent the bread from sticking to the pan.
7. Bake at 375 degrees for 50-60 minutes or until a fork or toothpick comes out clean.
To make the glaze:
Sift confectioners sugar into a bowl. Add lemon juice and lemon zest, whisking until smooth
