Tropical Candied Yams

Description

A wonderful mix of tangy and sweet; these yams are buttery, rich, and definitely enjoyable!


Ingredients

Scale

3 large yams (about 2 lbs)

½ cup butter

1/3 cup packed brown sugar

1/3 cup jumbo raisins

1/3 cup crushed pineapple

¾ cup pineapple juice

1 ½ cups water

¼ cup pecans, toasted

¼ tsp allspice

¼ tsp nutmeg

¼ tsp cinnamon

sprinkle of salt for balance


Instructions

  1. Melt butter in a large pan.
  2. Slice and cook yams evenly in the pan on medium heat, be sure sure to flip and rotate slices so they all get the same amount of cooking time. Cook for about 5 minutes on each side.
  3. Add brown sugar, water, pineapple juice, crushed pineapple, raisins, and spices to the pan. Cook this uncovered until yams are tender and the liquid has reduced and thickened.
  4. Top with toasted pecans, chop or slice if you wish.
