Crispy Roasted Cabbage Wedges

Talk about an easy way to get in your veggies. This recipe literally takes only 3 steps and can be ready in about 20 minutes, it's that simple. The crispy element is delicious and buttery. If you prefer your "crisp" a little more dry you can use ⅓ cup of panko instead of the amount called for.

How to slice cabbage for this dish

When slicing your cabbage, it will be best to cut it with the stem facing up. This way, you will ensure your stem stays intact and evenly sliced amongst both halves. If you cut the stem off or cut the cabbage with one side of the stem on and the other off, the cabbage will fall apart if using the side with no stem. *Please note that roasting time may vary by a few minutes depending on the size of the cabbage. For best results, find a medium-sized cabbage (not a gigantic one but not a tiny one either).

The process from start to finish

To make the crispy roasted cabbage wedges, you can melt the butter first then add in your panko and spices. When it's time to roast the cabbage be sure to brush each wedge with olive oil first, sprinkle with salt and pepper and then roast for 15 minutes. After this initial roasting period, remove the cabbage from the oven and sprinkle the panko mixture on top then return to the oven so the top can get nice and crispy!

I love this dish because it is really easy to make and easily serves as a great side dish to the main course.

Crispy Roasted Cabbage Wedges

Description

Crispy Cabbage Wedges have a slight crunch and a few seasonings that elevate roasted cabbage.  Enjoy as a side dish to many other accompaniments. 


Ingredients

Scale

½  head of cabbage with stem intact (medium sized cabbage)

¼  cup panko breadcrumbs

2 tbsp butter, melted

⅛ tsp paprika

⅛ tsp of ground mustard

⅛ tsp oregano, ground, dried, or fresh

olive oil for brushing

salt + pepper to taste


Instructions

  1. Slice cabbage head in half. Evenly slice cabbage into 4 or 6 wedges, depending on the size. Brush each wedge entirely with olive oil, season with salt and pepper. Roast in the oven at 400 degrees for 15 minutes.

  2. Combine melted butter, spices, and panko breadcrumbs in a small bowl, stir to combine. Place on top of roasted cabbage. Return cabbage to the oven and bake for an additional 5 minutes. Breadcrumbs should have browned slightly.
  • Prep Time: 5 minutes
  • Cook Time: 20 minutes
