Rice Krispie Popcorn Balls

What a yummy cross between Rice Krispie Treats and Popcorn Balls. These are definitely a crowd pleaser and super fun for kids!! (or the kid at heart). If you use microwave popped popcorn these can be ready in just under 10 minutes and trust me, they'll be gone just as soon as you make them.

A few tips for consistency

Using microwave popcorn: this is the time to find a low butter and unsalted option. I think Kettle Corn would be amazing for this!!! If by chance you have unpopped kernels like I do, popping the popcorn in butter will not be an issue but prepackaged popcorn does tend to have an enhanced butter flavor that will probably offset the taste.

You can use large marshmallows for this, I only used the mini ones this day because my store had a shortage.

How to pop your own popcorn

Be sure to follow the specific instructions on your popcorn if you choose to go this route because it could vary depend on the brand. In general however; popping pocorn on your own is fairly simple.

I'll admit, I was nervous doing this at first but once you get the hang of it, you'll be popping popcorn like a pro! The plus size to this is that buying a large container on your own is way more cost effective than buying the boxes of individual bags. Plus, you can customize your 'corn anyway you'd like!

You'll want to use a large pot (just think of how the kernels will grow once popped) heat up a small amount of oil on medium heat and add the kernels. The key to ensuring the popcorn doesn't burn is to shake the pan as the oil heats up and starts to pop the popcorn.

A recipe for success

When stirring the cereal and popcorn into the butter, work quickly so everything stays nice and crispy. Add the candies in last, stirring gently. Just know that they will probably melt a little. Again, it's best to work as quickly as possibly so that most of the chocolate stays in tact.

Description

A mix of Rice Krispies Cereal, M&M's, and popcorn that's great as a fun party snack or weeknight treat that everyone can enjoy!


Ingredients

Scale

4 cups popcorn, popped

2 cups crispy rice cereal

3 cups mini marshmallows

2 tablespoons butter (salted)

½ cup M&Ms (optional)

If popping your own popcorn: follow instructions on packaging to make 4 cups


Instructions

  1. Pop popcorn, set aside. Melt butter over low heat, stir in marshmallows. Continue stirring until marshmallows have melted completely. Immediately pour in popcorn and stir. Add in rice cereal, mixing quickly and carefully. Let mixture sit for 1-2 minutes before adding M&Ms.
  • Prep Time: 5 minutes
  • Cook Time: 10 minutes
