Meet your new favorite "pasta" dish....or maybe I should say pasta alternative! It is herbaceous, fragrant, aromatic, and all of the other words that can be used a delightful well-flavored dish.
Six herbs take this dish from lightly flavorful to extravagant in no time!
One of the benefits of using hearts of palm is that it cuts down significantly on the cook time. Prep all of your ingredients, throw them in the pan for a few minutes and eat! This is a meal that can be ready from start to finish in about 10 minutes and you seriously cannot beat that!
I also have to mention that I adore this meal with traditional pasta. Linguine would work well and I actually made it with spaghetti which was also very delicious.
ABOUT THESE SPECIALTY INGREDIENTS: Pine nuts add the most perfect crunch in a super tasty way. If you have a garden and you happen to have some of these herbs, this is the perfect time for it as you will need small amounts of each one. Know that using fresh herbs is what makes this dish SUPERB. I'm tooting my own horn with this one and I'm not afraid to say it.
I've found that Hearts of Palm Pasta comes in a can as well though I have yet to try this. I purchased mine from Trader Joe's and at the present moment I'm typing this it's found in a box then tightly sealed in a package within.

Description
A unique and delicious pasta alternative that has 6 different herbs! Omit the cheese and now it's Vegan (or add Vegan cheese).
Ingredients
9 oz Hearts of Palm Pasta (1 Trader Joe's Package)
¼ cup toasted pine nuts
2-3 garlic cloves, minced
2 tablespoons Extra Virgin olive oil
juice from 1 lemon
1 tablespoon chives, chopped
¾ teaspoon fresh oregano, chopped
1 tablespoon parsley, chopped
½ teaspoon fresh rosemary, chopped
1 teaspoon fresh thyme, chopped
3 basil leaves, sliced
Romano cheese (as much as you want)
salt and pepper to taste
Instructions
- Prepare all ingredients: chop fresh herbs, mince garlic, drain and rinse hearts of palm pasta and pat dry; toast pine nuts.
- In a medium pan over low heat, cook garlic in olive oil just until garlic is aromatic. Turn up the heat just slightly. Add hearts of palm, fresh herbs, the juice from one lemon, toasted pine nuts and toss to combine. Cook until everything has heated throughout. Season with salt and pepper. Plate and top with cheese.
Notes
This dish can easily be made vegan, just take out the cheese or add your own vegan cheese
