Let me start off by saying that this meal is so quick but I'm telling you, it is so delicious and flavorful that you're definitely going to want more. I love that it's also really light and won't weigh you down as much.
There are minimal ingredients needed to pull this off and that's part of what I love about it. You can save even more time if you use store-bought zucchini noodles but if you already have a spiralizer, making your own noodles is the way to go plus it's a bit more cost-effective.
Most times when I make a dish that requires the use of zucchini, I salt it to draw out the excess water. Salting this veggie creates a better result in the end because any water that is contained in the zucchini will sweat once the cooking process begins adding extra water to your dish and diluting some of the flavors (as long as you don't douse it in salt, the zucchini will not be salty).
I purchased Langoustine tails from Trader Joe's and I found them pre-cooked in the frozen section. If you happen to find some raw, I would suggest adding them to the butter first and then follow up with the zucchini shortly after as neither will take very long to cook. I found that I really enjoy this shellfish because of its tender and juicy nature. Plus, they're fun little bite-sized pieces that fit on a fork perfectly.

Langoustine Scampi with Zucchini Noodles

Ingredients
4 cups zucchini noodles
1 cup cooked Langoustine tails
juice from ½ lemon
3-4 garlic cloves, minced
¼ cup butter
salt and pepper to taste
Instructions
- Spiralize zucchini if not already completed. Melt upper in a medium-sized pan. Add garlic and cook until fragrant. Add zucchini noodles and lemon juice, cook until zucchini is tender. Add langoustine and cook for another 2-3 minutes to heat throughout. Add salt and pepper to taste.
