Lemony Gorgonzola Salmon

This has got to be one of my favorite salmon dishes of all time! The Gorgonzola cheese brings in an incredible amount of flavor and texture while the lemon elements bring in a tangy flavor that pairs really well with the cheese and other spices.

About the ingredients

The spices are part of what brings everything together for this dish. If you can find some sort of dried lemon, I would highly suggest using it here because it makes such a difference in the overall flavor profile. If not, lemon zest will yield similar results.

Preparing and cooking the salmon

In preparation for cooking the salmon, you will need to combine all the spices, coat all sides of the fish, preheat your oven to 375 degrees, and get an oven-safe pan. Using butter and olive oil together is key here as you'll want to impart that rich buttery flavor while raising the smoking point. This will ensure the fish is cooked well in the same process. I cooked the salmon over medium heat, skin-side down until the bottom portion changed colors due to the cooking process-this too 2-3 minutes.

The mid-way point

After a couple minutes, remove the partially cooked salmon from the pan, add the lemon juice and spinach. With the addition of the liquid, this is a good time to wilt the spinach over low heat. Return the fish to the pan and crumble the gorgonzola cheese on top. I used about half of the container of cheese which is about 4 oz. You can use the leftovers for so many different things-sprinkle on top of a salad, add it to some garlic bread; whatever your heart desires.

Finishing the cooking process

Make sure you're using an oven-safe pan-baking the salmon for about 10 minutes will allow it to finish cooking throughout. The cheese will get nice and bubbly towards the end.

Description

Lemony Gorgonzola Salmon has to be one of my favorite salmon dishes of all time. The cheese, spices, and lemon bring in layers of flavor.


Ingredients

Scale

1.5 lbs salmon filets, with skin on

2 lemons

2.5 oz gorgonzola cheese

2 cups spinach

1 teaspoon dried lemon peel (or lemon zest)

1 teaspoon dried garlic (granulated or minced)

¾ teaspoon dried oregano

½ teaspoon paprika

1 tablespoon butter

1 tablespoon olive oil

salt and pepper to taste


Instructions

  1. Preheat oven to 375 degrees. Season salmon with dried seasonings, coat all surfaces. Heat olive oil and butter in an oven-safe pan. Place salmon in the pan, squeeze juice from 2 lemons over fish. Cook salmon for 2-3 minutes skin side down or until bottom portion of salmon is cooked. Remove partially cooked salmon from pan.
  2. Wilt spinach in the pan. tossing in remaining liquids. Return salmon to pan, crumble gorgonzola cheese on top. Bake for 10 minutes or until salmon is fully cooked.
