1.5 lbs salmon filets, with skin on
2.5 oz gorgonzola cheese
2 cups spinach
1 teaspoon dried lemon peel (or lemon zest)
1 teaspoon dried garlic (granulated or minced)
3/4 teaspoon dried oregano
1/2 teaspoon paprika
1 tablespoon butter
1 tablespoon olive oil
salt and pepper to taste
- Preheat oven to 375 degrees. Season salmon with dried seasonings, coat all surfaces. Heat olive oil and butter in an oven-safe pan. Place salmon in the pan, squeeze juice from 2 lemons over fish. Cook salmon for 2-3 minutes skin side down or until bottom portion of salmon is cooked. Remove partially cooked salmon from pan.
- Wilt spinach in the pan. tossing in remaining liquids. Return salmon to pan, crumble gorgonzola cheese on top. Bake for 10 minutes or until salmon is fully cooked.
